Art History - evaluation methods

I wondered what kinds of evaluation methods you use to assess your students' understanding of art history within your various courses. I ask because I am looking for alternatives that are pedagogically sound and time-saving.
One of my colleagues here uses a web program to give quizzes each class. The students can take the quizzes as often as they want to improve their scores and the entire process is managed by software. At the end, my colleague simply reviews the output analysis. The students also submit a research paper. But that is it.
Since I am not ready to move to this system, I wondered if anyone on the list has any worthwhile ideas?
