Eisberg Salat Wedges mit Lotus Chips – Iceberg Salad Wedges with Lotus Chips
Ein schneller Salat, der auf jeden Tisch passt, einmal anders serviert. Eisbergsalat ist ja sehr knackig frisch und so kann
man ihn auch mal, statt kleingeschnitten wie üblich, als Wedges (Spalten, Ecken, Schnitze) auftischen. Ich habe die
Wedges mit Kirschtomaten und vor allem mit Lotuschips serviert, das passt wunderbar zusammen! Er schmeckt nicht nur
gut, sondern sieht auch sehr schön aus!

A quick salad fitting every dinner table! Iceberg is a very nice and crisp salad and can be served in wedges, not chopped
up as usual. I love this kind of serving, it’s different. I served the wedges with cherry tomatoes and with fried lotus chips, they fit so well together! And this salad does not only
taste good it also looks beautiful!
Fuer 4 Personen:
1 ganzer Eisbergkopf 10 Kirschtomaten
1/2 gelbe Pepperoni/Paprika Salatsauce:
1 EL Mayonnaise 1 EL Yoghurt 6 EL Olivenoel
2 EL Weissweinessig Salz und Pfeffer Paprika
1 Spritzer Worcestershire Sauce den Saft einer halben Zitrone den Abrieb einer Zitrone
2 El Sahne
Den Eisbergsalat ganz waschen, dazu legt man ihn in kaltes gesalzenes Wasser ein, laesst ihn ca 5 Minuten drin, dann laesst man ihn ca 15 Minuten abtropfen. Den Salatkopf halbieren und nun nochmals mit der Schnittflaeche nach unten
gut austropfen lassen. Dann jede Haelfte in 6-8 Wedges schneiden, je nach Groesse des Salatkopfes. Die Wedges auf einen flachen Teller legen, mit den in Viertel geschnittenen Kirschtomaten und den kleingewuerfelten Pepperoni bestreuen.
Die Lotus Chips nach diesem Rezept herstellen. Danach auf dem Salat verteilen. Die Zutaten zur Salatsauce gut vermischen und ueber die Wedges geben. Sofort servieren.
Dieser Salat kann auch mit Kopfsalat gemacht werden.

For 4 Persons:
1 whole Iceberg Salad 10 Cherry Tomatoes
1/2 Yellow Pepperoni/Capsicum Salad Dressing:
1 tbsp Mayonnaise 1 tbsp Yogurt 6 tbsp Olive Oil
2 tbsp White Wine Vinegar Salt and Pepper
Paprika
1 dash Worcestershire Sauce juice of half a Lemon
grated skin of one Lemon 2 tbsp Whipping Cream
Wash the whole Iceberg salad in some salted water, leave it in there for 5 minutes, then let it drip for 15 minutes. Now cut the Iceberg salad into two halves and let drip again with the open cut side down, there is still some water coming out. Then cut each half into 6-8 wedges depending on the size of the salad head. Put the wedges onto a large plate, sprinkle with the cherry tomatoes cut into quarters and the diced capsicum. Prepare the lotus chips as explained in this Recipe. Then put them onto the salad. Mix the ingredients for
the salad dressing well together and pour over the salad.
Serve immediately.
This salad can also be made with butter lettuce.
Lotuswurzel Chips – Lotus Root Chips
Gerne macht man, wenn man Besucher hat zum Essen, ein paar separate Dinge, die man als essbare Dekoration verwenden kann.
Ja, man kann zu allem gehackte Kraeuter nehmen, das passt immer, aber es darf auch mal was Neues sein!
Bei uns in Asien gibts diese Lotuswurzel und die hat mich schon immer fasziniert. Oft wird sie in Chinesischer Suppe serviert, aber da muss ich zugeben, mag ich sie nicht so sehr.
Sie schmeckt aehnlich einer Steckruebe oder Rettich, nicht meine Lieblingsgemuese. Aber als ich sie einmal in duennen Scheiben frittiert habe, da hielt mich nichts mehr zurueck.
Oh, sind die gut!!! Knusprig und einfach herrlich. Zudem sehen sie super aus auf Salat oder Fleisch, Fisch oder nur so als
Chips serviert!

When you cook for visitors you like to decorate the plates nicely. Of course, you can use chopped herbs as a decoration,
but sometimes it’s good to find something new.
Here in Asia there are these lotus roots, they always fascinated me. They are often cooked in a Chinese soup, but I
don’t really like them that way. They taste similar to suede or radishes, not really my favorite vegetables. But when I once fried them in thin slices like chips, there was no more
holding back! Oh, how good they are!!! Crisp and just delicious! And they look great on a salad, meat or fish, or
just like this as chips!
1 Lotus Wurzel Oel zum Frittieren
Das Oel in einer flachen Pfanne erhitzen. Die Lotuswurzel schaelen, man kann sie auch nur gut abbuersten. Dann mit dem
Gurkenhobel direct in die Pfanne hobeln, bis der Boden der Pfanne bedeck ist. Nach 2-3 Minuten alles einmal wenden und
braten bis sie goldig braun sind. Auf einbem Kuschenpapier abtropfen lassen. Wiederholen bis die Lotuswurzel aufgebraucht
ist.

1 Lotus Root Oil for frying
Heat the oil in a wide pan. Peel the root, but you can also just brush it well, and slice directly into the hot oil until
the bottom is covered. The slices should be as thin as
possible. After 2-3 minutes turn over and fry until golden brown. Take out and let drip off on a kitchen paper. Repeat
with the rest of the root.
