Agroscope In order to characterize the diversity of gin produced in the Swiss alpine region, Agroscope has developed this fl vor wheel for gin. The common vocabulary is intended to facilitate the description and tasting. A systematic approach with objective criteria increases the accuracy of the sensory description and enhances the competence of the panelist.
This flavour wheel consists of three con- centric circles. These are separated by colour into six flavour categories: Vege- table, Spicy, Fruity, Floral, Off-flavours and Taste. In the inner circle, these cate- gories are partly divided into respective
sub-categories such as Herbs, Woody, etc. The outer circle contains 58 individ- ual attributes, which can be unmistaka- bly characterized with aroma references.
They provide clues to the aroma diversity of the various distillates and help to cre- ate an individual flavour profile for each gin.
