Useful information

There will be parts where you are free to use your smartphone to check on words. Here are some useful websites that you might want to use:

• www.dict.cc offers words in different contexts and has an audio option for getting the pronunciation right; can be downloaded as an app for using it offline.

• www.leo.org quite similar to dict.cc but without the offline option

• www.linguee.de a German-based online dictionary that presents you words embedded in whole sentences and thus in a specific context. Very helpful for checking on whether a certain combination of words can be used in a particular situation.

Tina: Grand Hotel, Vienna, Tina Bail speaking. What can I do for you?

Mr. Watson: Hello, this is Peter Watson of Enterprises International from San Francisco. I’m looking for a business hotel where I can make a presentation of kitchen utensils to our Austrian partners. Therefore I’m looking for a hotel with special business facilities.

Tina: Thank you, Mr Watson. Could you please tell me when you’re planning to come and how many rooms you’ll need?

Mr. Watson: We’ll be staying in Vienna from May 24 until May 31 and I think we’ll need seven single rooms.

Tina: OK, let me just check the availability of rooms during that time […] Yes, seven rooms and our conference rooms are available during that period. How many conference rooms do you need and what kind of equipment do you require?

Mr. Watson: We’ll need at least two separate conference rooms with a minimum of seventy square meters each.

The rooms have to be equipped with photocopying facilities, fax and wireless internet connection.

Tina: That’s no problem, Mr Watson. We actually offer free internet access in all of our rooms. The conference rooms are also equipped with overhead projectors, flipcharts, TV and DVD player.

Moreover, there’s secretarial help available on request.

Mr. Watson: That sounds good. Well, as you know a business day can be quite tiring. What kind of leisure facilities do you offer at the hotel?

Tina: We’ve got a large sauna and a fitness centre that you may use.

Mr. Watson Well, I think I’ve found the right hotel. Could you please e-mail me all the details? And I think it would also be good to have a brochure and a price list. I’ll get back to you next week. Is that OK?

Tina: Yes, of course. I’m sending you an e-mail straight away and I’ll put our brochure and price list in the post for you. Could you please give me your e-mail and your postal address?

Mr. Watson: Sure. My e-mail is: peter-watson@enterprise.com. And our postal address is: Enterprises International, 220 Woodland Drive, San Francisco, 94012 USA.

Tina: Thanks a lot. We hope to meet your expectations and look forward to hearing from you soon.

Goodbye and thank you for your call.

Mr. Watson: Goodbye.

The perfect menu: The Ultimate Menu Planning Guide

An inviting menu is a balance of bland, strong, sharp and sweet tastes, with foods of different textures, temperatures, and colors.Bland tastes, such as rice, pasta, or potatoes, contrast with strong flavors, such as meat, game, or well-seasoned vegetables, followed by the sharp taste of a vinaigrette salad, accented by a sweet dessert.

A well-balanced menu does not duplicate taste. When cheese is served as an hors d'oeuvre, it is not incorporated in a dish served at the table.

Because sweet foods dull the appetite, fruit is not served as an appetizer. The exception is grapefruit, which has a sharp taste that stimulates the palate.

When a first course is served in a pastry shell, dessert with a crust is not appropriate. If creamed soup is served as a first course, creamed vegetables are not included in the main course. When sauce is served, it is presented only once. From light to heavy, sour to sweet, each course is designed to meet a specific taste requirement.

Food textures promote mastication, and the menu is designed to offer both crunchy and smooth textures. The crunchy texture of raw foods, such as carrots and celery, contrast with soft foods, such as cheese or soup.Crisp salad greens balance foods made with a smooth consistency, such as noodles in a cream sauce.

The well-balanced menu includes both hot and cold temperatures.

Because hot foods stimulate the appetite, a hot dish is always included in a menu, except in extremely hot weather, when a cold menu is less obtrusive to the palate. At a four-course meal a hot first course is followed by a cold second course, then a hot main course and a

cold dessert.

To maintain the right temperature, hot food is served on warm plates, and cold food on cool plates. Porcelain is naturally cold to the touch, so porcelain plates are not cooled. For a hot course, they are warmed in a low oven (approximately 150 to 200°F, or 66 to 93°C). Plates can also be warmed in the drying cycle of the dishwasher.

A well-balanced menu offers a contrast of colorful foods. The main course is the focal point of the menu, and all other foods are selected to accent the taste, temperature, texture, and colors.

If the cocktail hour is particularly long, the palate may become dulled by hors d'oeuvres, in which case highly seasoned food is recommended for subsequent courses.
