Flavour Wheel for Kirsch

Agroscope | 2015 –Fact Sheet 8a

What is a flavour wheel?

In order to better characterize the diversity of Swiss Kirsch, Agroscope has developed a flavour wheel with 65 unique attributes. The common vocabulary facilitates the description and tasting. A standardized system with objective criteria increases the accuracy of the sensory description and enhances the competence of the panelist.

The flavor wheel for Kirsch consists of three circles and is divided into seven flavour categories (separated by color), some of them are divided into respective sub-categories. The outer circle represents the individual attributes which are characterized by distinctive flavour references. They provide evidence of the great variety of flavours and tastes in cherry distillates and help generate individual flavour profiles for each Kirsch.
